Instructions:

1. Fill shaker with ice and add cocktail
2. Shake vigorously for 20 seconds
3. Fill rocks glass with ice and strain cocktail

The story behind the drink:

The Mai Tai is one of the most iconic cocktails to emerge from the golden age of tiki culture. Created in the 1940s by legendary bartender Victor “Trader Vic” Bergeron, the drink was designed to showcase the depth and flavour of great rum rather than overpower it with excessive sweetness. Its name is said to come from the Tahitian phrase “Maita’i,” meaning “good” or “out of this world,” after friends tasted the original recipe for the first time. Over the decades, the Mai Tai became synonymous with tropical escapism — a timeless cocktail celebrated for its balance of citrus, nuttiness, and rum-forward character.

This Mai Tai combines two distinctive DropWorks rums to create depth and balance. Clear Drop Rum adds a clean, smooth sugar cane character that keeps the cocktail bright and refreshing. Instead of a traditional orange curaçao, Edmund"s use FAIR Kumquat Liqueur, layered with vibrant citrus notes of blood orange, mandarin and orange blossom, alongside a gentle hint of spice.
