Barrel-aged DropWorks rum, triple sec, fresh lime and allergen-free orgeat come together in a vibrant, punchy take on the tiki classic. We also include dried lime slices to garnish.

A bold and refreshing twist on the tiki classic, this Mai Tai balances the rich warmth of barrel-aged DropWorks rum with the bright character of their Clear Drop rum. Fresh lime brings a zesty sharpness, while FAIR Kumquat Liqueur adds layers of citrus complexity and gentle sweetness. Rounded out with silky allergen-free orgeat, the result is a vibrant, tropical cocktail with a smooth finish that keeps you coming back for another sip.

Instructions:

  1. Fill shaker with ice and add cocktail
  2. Shake vigorously for 20 seconds
  3. Fill rocks glass with ice and strain cocktail
  4. Garnish with a slice of dried lime

The story behind the drink:

The Mai Tai is one of the most iconic cocktails to emerge from the golden age of tiki culture. Created in the 1940s by legendary bartender Victor “Trader Vic” Bergeron, the drink was designed to showcase the depth and flavour of great rum rather than overpower it with excessive sweetness. Its name is said to come from the Tahitian phrase “Maita’i,” meaning “good” or “out of this world,” after friends tasted the original recipe for the first time. Over the decades, the Mai Tai became synonymous with tropical escapism — a timeless cocktail celebrated for its balance of citrus, nuttiness, and rum-forward character.

  • DropWorks Clear Drop Rum
  • FAIR Kumquat Liqueur
  • Fresh lime
  • Orgeat (allergen free)
  • Sugar cane syrup

This Mai Tai combines two distinctive DropWorks rums to create depth and balance. Barrel Drop Rum is aged in Portuguese and American oak barrels, bringing notes of rich vanilla, dates and cinder toffee. Clear Drop Rum adds a clean, smooth sugar cane character that keeps the cocktail bright and refreshing. Instead of a traditional orange curaçao, Edmund"s use FAIR Kumquat Liqueur, layered with vibrant citrus notes of blood orange, mandarin and orange blossom, alongside a gentle hint of spice. Fresh lime juice delivers sharpness and balance, while allergen-free orgeat adds a silky richness to round out this vibrant take on the tiki classic.
