NON is a proper rethink of what a non-alcoholic drink can be, built from the ground up with real flavour rather than trying to mimic wine. This one, NON 7, starts with a cherry and spice mix stewed for two hours until it becomes a jammy blend of bloomed spices and caramelised cherries, then cold brew coffee is worked in for a chocolatey finish and a touch of tannin. Murray River salt rounds it out, bringing a savoury depth before the whole thing is carbonated for a refreshing sparkle.

Deeply coloured and richly flavoured, it's NON's answer to a fizzy red wine, think Lambrusco, and it pairs beautifully with a roast dinner or a well cooked steak. Founded by Aaron Trotman in Melbourne, NON is made using verjus, unripened juice from Barossa Valley Semillon grapes, flavoured with a stew of fruit, herbal and sometimes savoury aromatics before bottling. A lovely gift for anyone cutting back on alcohol without wanting to compromise on flavour.
