The classic, done properly. This pickling liquid from Sylt is their take on the traditional gherkin brine, dill and mustard with a good tangy kick, so all you have to do is pour it over your fruit or veg and leave it to work.

It's brilliant with cucumber, radish, beetroot or courgette, and the longer you leave it in the fridge the better it gets. A lovely gift for anyone who loves a proper homemade pickle without the faff of boiling vinegar.

• For best results, store for over 24 hours before using. If stored in a sterilised jar and kept in the fridge, your pickles should last over 6 months.
