A little lemon with a great deal to say. Olives Et Al found these teeny Beldi lemons on their travels, and being small they have a fine, thin skin, exactly what you want from a preserved lemon. It softens readily in the brine and is easy to slice or chop finely into a dish. Preserved in salt and brine, their flavour becomes deep, fragrant and savoury, bringing the brightness of lemon without the raw sharpness of fresh juice.

Rinse them before using, and scoop away the pulp if you want a gentler result, then chop the peel finely. Stir it into tagines, couscous, marinades and salad dressings, or scatter it over roast vegetables, chicken and fish. A little goes a long way, and it is brilliant in a chicken and olive tray bake, where it gives the roasting juices a bright, salty lift.
