These French sablés are made in Sablé sur Sarthe to a recipe that goes back to 1670, when the Marquise de Sablé herself brought them to court. They're round, gently jagged at the edge and short in that way only real butter gives you; this batch is scented with natural bergamot, the same note that gives Earl Grey its lift, so there's a light floral tang under the richness.
They come packed in a charming round tin decorated with birds, part of the brand's Oisellerie collection, so it looks after itself as a gift and keeps the biscuits fresh once it's open. Good with a cup of tea in the afternoon, or wrapped up as it is for someone who appreciates a well made thing.
