A modern take on an old gin tradition, this one from Mother's Ruin balances spice and herb with real care, sweet orange peel, vanilla pods, bay, nutmeg and coriander seed layered over a base of juniper and orris root, with a trace of Demerara for character. It's distilled in their tiny copper still, Naomi, then rested for a few weeks to let everything settle and merge.

Old Tom sits slightly sweeter and more richly flavoured than the London Dry gins most of us grew up on, named after the black cat sign that hung over 18th century illicit gin palaces. It's having a proper comeback thanks to that stronger flavour profile, which works brilliantly in cocktails. Left unfiltered for full depth, it's smooth, spiced and genuinely distinctive.
