When you take that first sip, your taste buds will wake up, with the infused fresh mint giving a cool kick, while the lime juice adds a fresh zing. The sugar brings a touch of sweetness, perfectly balancing the tangy vibes. And let's not forget the rum, adding that extra oomph – this Mojito is like a tropical getaway in a glass.

Instructions:

1. Fill shaker with ice and add cocktail
2. Shake vigorously for 20 seconds
3. Fill tall glass with ice, strain cocktail, top with soda
4. Stir in 2 lime slices and add a sprig of mint

The Mojito’s origins might lie with the Elizabethan mariner, Sir Francis Drake. Legend has it that a drink comprising a rough spirit distilled from cane sugar – ‘aguardiente’ – with sugar, lime and mint was created in his name and used as a way of relieving colds and fever. Fast forward to the 1900s and the Mojito – so similar in composition to the Drake – was heavily promoted by the Bacardi Company, alongside cocktails such as the Daiquiri and Cuba Libre. In fairness, though, we probably have Prohibition to thank for the wider awareness of the Mojito – and its likely progenitor, the Mint Julep – as affluent Americans flocked to Cuba to sample cocktails that were strictly forbidden in the US.

This Mojito is made with Suffolk Distillery white rum, which takes inspiration from the beautiful rural landscape of Suffolk. The Suffolk based distillery produces a range of spirits with a blend of exotic and locally sourced natural botanicals. Edmunds infuse this with fresh mint, and add sugar syrup to get the perfect amount of sweetness.
